SKORDALIA

Mashed garlic combined with potatoes and fragrant olive oil make a wonderful rustic sauce from Greece.

7 garlic cloves

salt

¾ pound baking potato, peeled, cooked, and mashed

1 cup extra virgin olive oil

⅓ cup white wine vinegar

In a mortar with a pestle or in a bowl with back of a wooden spoon, mash garlic with 2 teaspoons salt. Add potatoes, and pound with pestle or work with back of spoon until paste is formed. (Do not use food processor or blender.) Gradually beat in olive oil alternately with vinegar until mixture is creamy, adding a little water if necessary. Season to taste with salt. Serve over fish, roasted beets, or eggplant, or as a spread for bread.
